While we're on the subject of "eew" meats, how about blood sausage? I could bring myself to eat chitlins even knowing that they're pig colons before I'd eat something called blood sausage.

You know, Organ Meats would make a great name for a list, wouldn't it? Or maybe "Eew Meats." Then one could include blood sausage (since technically it's not an organ meat). If one were inclined.
Wait... are chitlins really colons? Or intestines? I thought they were intestines. Granted, there's not a huge amount of difference.

They are intestines--large intestines, which to me means colon. I suspect that real chitlins were made of both, actually.

Hey c_b--if you do make that list, put sweetbreads on it. If the thymus and pancreas don't qualify as organ meats, I don't know what would.
